Sweet & Spicy Orange Chicken
Sauce:
3 cups water
1/4 cup orange juice
1/2 cup lemon juice
2/3 cup rice vinegar
1/4 cup and 1 tablespoon soy sauce
3 cups packed brown sugar
1 teaspoon minced fresh ginger root
1 teaspoon minced garlic
1 teaspoon red pepper flakes
1/4 cup and 2 tablespoons cornstarch
1/4 cup water
Chicken:
4 boneless, skinless chicken breasts, cut into 1/2 inch pieces
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
Enough oil to deep fry chicken pieces
1. Pour water, orange juice, lemon juice, rice vinegar, and soy sauce into a saucepan and set over medium-high heat. Stir in the brown sugar, ginger, garlic, chopped onion, and red pepper flakes. Bring to a boil. Dissolve 1/4 cup and 2 tablespoons of cornstarch in 1/4 cup of water. Set sauce to the side.
2. In a resealable plastic bag, mix the flour, salt, and pepper. Add the chicken pieces, seal the bag, and shake to coat. Do a double coating for more crispy chicken.
3. Heat oil in a deep pot or skillet over medium high heat. When oil is hot deep fry the chicken pieces until done. Place chicken on paper towel to absorb the oil.
4. In a wok or skillet over medium high heat add chicken. Then add sauce. Don't pour all the sauce in at one time, unless you want lots of sauce on your chicken. If you like less sauce, a little at a time and stir until desired coating is achieved. After 2-3 minutes it ready to serve. If you have any leftover sauce, just store it in the refrigerator.

What the *eck is that?" you ask? Well, once upon a time, it was a brick of cream cheese and a quarter can of cranberries. It was great on turkey sammiches. Not sure how long it has been there, but that stuff on top is as fuzzy as it looks. When I poured it into a 1 gallon zipper bag for disposal, it raised a fine dust cloud. So, if I am mysteriously ill in the near future, tell the doctors I inhaled this, and ask if there is anything they can do about that? The z-bag with the contents may still be in my garbage in the kitchen or on the balcony.
